Happy Wednesday friends! I am so excited about getting to cook in our new kitchen, there is so much space for food prepping and storage. It felt great to get back into the usual routine after a week of moving and prepping the house. Sunday afternoon we went grocery shopping to restock our pantry (from all the moving) and get some things together for lunches. I usually have to make my lunches ahead of time because of our busy schedule in the mornings, so salads tend to be soggy and unappetizing by the next day. But this weekend I decided to get creative and create what I think is the “Perfect Lunch Salad”.
I got some asparagus, Brussel sprouts, arugula, chicken and goat cheese together, but added some seasonings to give it even more flavor. I had one on Monday, and not only was it delicious, but kept me full all afternoon long.
For the asparagus and brussel sprouts, I just put some avocado oil in a pan and cooked them on the stove with some garlic and lemon juice. This takes little to no time and you can use the leftover oil from one vegetable to the next.
While those are cooking, I started to prep the bowl. I tried layering the bottom of the bowl with some hummus. I always hate however everything is at the top of the salad and you lose the flavor as you start to finish, so adding something at the bottom helps keep the salad tasty throughout. I dressed the arugula with olive oil and lemon juice, one of my favorite combinations before adding it in.
I cut up some cherry tomatoes to put in alongside my goat cheese . Next I added in my grilled chicken (I got the premade chicken from Trader Joes), but you can add in any protein you would like. I added in silver almonds, avocado, and “Everything Bagel” seasoning to top it off, and with all the flavors, I didn’t need dressing! But you could add in a champagne vinaigrette if you feel like you need one.
This salad has all of the flavors, and kept very well in the fridge for lunch the next day. I was able to get three salads out of the ingredients I had on hand for those wondering. Salads can get boring, but this one had enough colors and flavors to keep it fun! It took no time to prepare, and you can use any vegetable combination you have on hand.

Perfect Lunch Salad
- 2 Cups Chopped up asparagus ~1/2 cup per salad
- 2 Cups Brussel Sprouts (shredded preferred) ~1/2 cup per salad
- 3 Cups Arugula 1 cup per salad
- 2 Cups Cherry Tomatoes Cut in halves
- 1 1/2 Avocado Cut in slices
- 3 Tbsp Hummus 1 Tbsp per salad
- 3 Tbsp Silvered Almonds 1 Tbsp per salad
- 3 Oz Goat Cheese 1 oz per salad
- 2-3 Tbsp Avocado Oil For cooking
- 4 Oz Baked Chicken (or desired protein)
- Everything Bagel Seasoning
- 1 Lemon
Cut up asparagus and Brussel sprouts as desired, then pour oil in saute pan on stove. Cook until vegetables are tender.
Place 1 Tbsp of hummus on the bottom of the bowl
Dress asparagus with 1/2 lemon juice and some oil. Toss and put on top of hummus
Add in cherry tomatoes, goat cheese, avocados, cooked vegetables and chicken. Sprinkle with almonds and Everything Bagel Seasoning.
